Lebanese Zaatar is a mixture of one or more varieties of thyme, sumac, to give it its essential hint of acidity, salt and toasted sesame seeds. In Morocco, for breakfast, we eat Lebanese bread that is first dipped in a little olive oil, then in the spice mix. You can also use thyme to flavor cottage cheese, tahini, hummus or yogurt sauce. Thyme is also essential to make the traditional Lebanese Manakish pancakes. Of course, thyme pleasantly flavors many recipes where it can replace, for example, traditional Provencal herbs.
